Ingredients

  • 1 lb chicken thighs, cut into chunks
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup sake
  • 2 tbsp sugar
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • Green onions (optional)
  • Sesame seeds for garnish
  • Skewers, soaked if wooden

Instructions

  1. In a saucepan, combine soy sauce, mirin, sake, sugar, garlic, and ginger. Simmer for 10–12 minutes until thickened.
  2. Thread chicken (and green onions if using) onto skewers.
  3. Grill over medium heat, turning every 2–3 minutes.
  4. Baste with sauce as it cooks until chicken is done and glazed.
  5. Sprinkle with sesame seeds and serve hot.

Notes

  • Soak skewers to prevent burning on the grill.
  • Use chicken thighs for best texture.
  • Double the sauce to have extra for dipping.
