- 4 chicken thighs
- 1/2 cup sun-dried tomatoes chopped
- 2 cups fresh spinach
- 3 garlic cloves minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/3 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Season chicken with salt, pepper, and Italian seasoning, then sear in olive oil until golden and nearly cooked through. Remove and set aside.
- Sauté garlic and sun-dried tomatoes in the same skillet for 1 minute.
- Pour in chicken broth and cream and bring to a simmer.
- Stir in Parmesan cheese and let melt until sauce thickens.
- Add spinach and cook until wilted.
- Return chicken to skillet and simmer 5-10 minutes until cooked through and sauce thickens.
- Taste and adjust seasoning before serving.
