Ingredients

  • 4 chicken thighs
  • 1/2 cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt, pepper, and Italian seasoning, then sear in olive oil until golden and nearly cooked through. Remove and set aside.
  2. Sauté garlic and sun-dried tomatoes in the same skillet for 1 minute.
  3. Pour in chicken broth and cream and bring to a simmer.
  4. Stir in Parmesan cheese and let melt until sauce thickens.
  5. Add spinach and cook until wilted.
  6. Return chicken to skillet and simmer 5-10 minutes until cooked through and sauce thickens.
  7. Taste and adjust seasoning before serving.
