  • 1 pound breakfast sausage
  • 1 small onion diced
  • 8 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F and grease a 9×13 baking dish.
  2. Brown sausage in a skillet over medium heat. Add onion and cook until soft. Drain excess fat.
  3. In a bowl, whisk together eggs, milk, salt, and pepper.
  4. Spread sausage mixture into baking dish. Pour egg mixture over it.
  5. Sprinkle shredded cheeses over the top evenly.
  6. Arrange tater tots in a single layer across the top.
  7. Bake for 40–45 minutes or until eggs are set and tots are golden.
  8. Cool slightly, garnish with parsley, and serve warm.
