- 1 small onion diced
- 8 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese

- Chopped fresh parsley for garnish
Instructions
- Preheat oven to 375°F and grease a 9×13 baking dish.
