  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F. Cut tops off peppers and remove seeds. Boil for 5 minutes, then drain and set aside.
  2. In a skillet, sauté onion and garlic in oil. Add ground beef and cook until browned. Season with salt, pepper, and Italian seasoning.
  3. Stir in cooked rice and tomato sauce. Mix until heated through.
  4. Place peppers upright in a baking dish. Fill with beef and rice mixture.
  5. Top with shredded cheddar and mozzarella cheese.
  6. Bake for 25–30 minutes until cheese is bubbly and golden.
  7. Garnish with parsley before serving.
