Description

This slow cooker chicken and dumplings is easy hearty and one of the best comfort food ideas! A quick simple and healthy dinner for busy nights or cozy weekends. With tender chicken and fluffy dumplings it’s always a hit and beginner-friendly!


Ingredients

Scale
  • 2 lbs boneless chicken breasts or thighs
  • 3 carrots chopped
  • 2 celery stalks chopped
  • 1 onion diced
  • 3 garlic cloves minced
  • 4 cups chicken broth
  • 2 cans (10.5 oz each) cream of chicken soup
  • 1 can refrigerated biscuit dough
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  1. Add chicken, carrots, celery, onion, and garlic to slow cooker.
  2. Pour in chicken broth and cream of chicken soup, season with salt and pepper, and stir gently.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  4. Shred chicken in the pot using two forks and stir to combine.
  5. Cut biscuit dough into small pieces and layer on top (don’t stir).
  6. Cover and cook on high for 1–1.5 hours until dumplings are cooked through.
  7. Stir gently and garnish with parsley before serving.

Notes

  • Use rotisserie chicken for a quicker version.
  • Add peas or corn during the last hour for extra color.
  • Reheat gently to preserve dumpling texture.
