- 2 lbs boneless chicken breasts or thighs
- 3 carrots chopped
- 2 celery stalks chopped
- 1 onion diced
- 3 garlic cloves minced
- 4 cups chicken broth
- 2 cans (10.5 oz each) cream of chicken soup
- 1 can refrigerated biscuit dough
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Instructions
- Add chicken, carrots, celery, onion, and garlic to slow cooker.
- Pour in chicken broth and cream of chicken soup, season with salt and pepper, and stir gently.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Shred chicken in the pot using two forks and stir to combine.
- Cut biscuit dough into small pieces and layer on top (don’t stir).
- Cover and cook on high for 1–1.5 hours until dumplings are cooked through.
- Stir gently and garnish with parsley before serving.
Notes
- Use rotisserie chicken for a quicker version.
- Add peas or corn during the last hour for extra color.
- Reheat gently to preserve dumpling texture.
