- 12 oz rigatoni pasta
- 1 lb shrimp, peeled and deveined
- 3 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 3 tbsp butter
- 2 tbsp olive oil
- 1 1/2 cups shredded mozzarella
- 1/3 cup grated parmesan cheese
- 2 tbsp chopped fresh parsley
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat oven to 375°F and boil pasta until al dente; drain and set aside.
- Sauté garlic in butter and oil, then add shrimp and cook until pink.
- Add lemon juice, zest, and seasonings, then toss in pasta and parmesan.
- Transfer to baking dish and top with mozzarella and extra shrimp.
- Bake uncovered for 15–20 minutes, then broil 2–3 minutes until golden.
- Garnish with parsley and serve warm.
