Description

Perfect for dinner parties, cozy weekends, or seafood lovers’ nights, this shrimp scampi bake is zesty, rich, and satisfying.


Ingredients

  • 12 oz rigatoni pasta
  • 1 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1 1/2 cups shredded mozzarella
  • 1/3 cup grated parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat oven to 375°F and boil pasta until al dente; drain and set aside.
  2. Sauté garlic in butter and oil, then add shrimp and cook until pink.
  3. Add lemon juice, zest, and seasonings, then toss in pasta and parmesan.
  4. Transfer to baking dish and top with mozzarella and extra shrimp.
  5. Bake uncovered for 15–20 minutes, then broil 2–3 minutes until golden.
  6. Garnish with parsley and serve warm.

Notes

  • Add red pepper flakes for a spicy touch.
