Ingredients

  • 8 large eggs
  • 1/3 cup milk
  • 1/2 lb breakfast sausage crumbled
  • 1/2 cup chopped onion
  • 1 cup chopped bell peppers (red and green)
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F. Lightly grease a baking dish.
  2. Heat olive oil in a skillet. Cook sausage until browned. Add onion and bell peppers and sauté until soft.
  3. In a bowl whisk eggs milk salt and pepper until well combined.
  4. Spread sausage and veggies in baking dish. Pour egg mixture over. Sprinkle with cheese.
  5. Bake for 30–35 minutes until eggs are set and cheese is golden. Cool slightly before slicing.
