- 1/3 cup milk
- 1/2 lb breakfast sausage crumbled
- 1/2 cup chopped onion
- 1 cup chopped bell peppers (red and green)
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F. Lightly grease a baking dish.
- Heat olive oil in a skillet. Cook sausage until browned. Add onion and bell peppers and sauté until soft.
- In a bowl whisk eggs milk salt and pepper until well combined.
- Spread sausage and veggies in baking dish. Pour egg mixture over. Sprinkle with cheese.
- Bake for 30–35 minutes until eggs are set and cheese is golden. Cool slightly before slicing.
