  • 12 oz smoked sausage, sliced
  • 2 satsumas, sliced
  • 4 eggs
  • 4 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1 tbsp Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Slice sausage and satsumas. Set aside.
  2. Melt butter in large pot, whisk in flour to make roux. Cook until deep golden brown.
  3. Add onion, bell pepper, and garlic. Cook until soft.
  4. Pour in chicken broth and stir well.
  5. Add sausage, Cajun seasoning, salt, and pepper. Simmer 20 minutes.
  6. Soft-cook eggs in separate pot until yolks are slightly runny.
  7. Add satsuma slices a few minutes before serving.
  8. Ladle into bowls, top with egg, garnish with green onions and extra spice if desired.
