- 5 cups chicken or vegetable broth
- 2 cloves garlic (minced)
- 1 tbsp fresh ginger (grated)
- 2 tbsp soy sauce
- 1 tsp sesame oil (plus more for finishing)
- 1 cup sliced carrots
- 1 cup sliced mushrooms
- 1–2 heads baby bok choy (chopped)
- 2 green onions (sliced)
- Optional chili oil for topping
Instructions
- Heat sesame oil in a large pot over medium heat. Sauté garlic and ginger until fragrant.
- Add broth and soy sauce. Bring to a gentle simmer.
- Add carrots and cook for 3–4 minutes. Then add mushrooms and bok choy.
- Once vegetables are nearly tender, add frozen potstickers and cook for 6–8 minutes until heated through.
- Stir in green onions and a touch of sesame or chili oil if desired.
- Ladle into bowls and serve hot.
