Ingredients

  • 810 frozen potstickers (any flavor)
  • 5 cups chicken or vegetable broth
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 2 tbsp soy sauce
  • 1 tsp sesame oil (plus more for finishing)
  • 1 cup sliced carrots
  • 1 cup sliced mushrooms
  • 12 heads baby bok choy (chopped)
  • 2 green onions (sliced)
  • Optional chili oil for topping

Instructions

  1. Heat sesame oil in a large pot over medium heat. Sauté garlic and ginger until fragrant.
  2. Add broth and soy sauce. Bring to a gentle simmer.
  3. Add carrots and cook for 3–4 minutes. Then add mushrooms and bok choy.
  4. Once vegetables are nearly tender, add frozen potstickers and cook for 6–8 minutes until heated through.
  5. Stir in green onions and a touch of sesame or chili oil if desired.
  6. Ladle into bowls and serve hot.

  • Don’t overboil the soup to keep dumplings intact.
