Ingredients

  • 1/2 cup soy sauce
  • 1/4 cup citrus juice (lemon or yuzu)
  • 2 tbsp rice vinegar
  • 1 tbsp mirin
  • 1 tbsp sugar
  • 1 piece kombu (2-inch)
  • 1/4 cup bonito flakes
  • Sesame seeds for garnish
  • Sliced green onion or chili (optional)

Instructions

  1. In a saucepan, combine soy sauce, citrus juice, rice vinegar, mirin, and sugar.
  2. Add kombu and bonito flakes. Heat gently without boiling for 5 minutes.
  3. Remove from heat and let steep until cooled.
  4. Strain out solids and transfer to a jar or container.
  5. Refrigerate and use within 1 week. Garnish with sesame and green onion when serving.
