Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 2 tbsp sugar
  • 1 large egg
  • 3/4 cup milk
  • 1/2 tsp vanilla extract
  • Butter for cooking

Instructions

  1. In a bowl, whisk together flour, baking powder, and sugar.
  2. In another bowl, whisk egg, milk, and vanilla until combined.
  3. Pour wet ingredients into dry and stir until just combined.
  4. Heat a non-stick pan over medium-low heat and add a little butter.
  5. Drop tablespoons of batter into the pan.
  6. Cook until bubbles form, then flip and cook the other side.
  7. Repeat until all batter is used. Serve warm.

Notes

  • Don’t overmix for fluffier pikelets.
  • Freeze extras with parchment between layers.
  • Add cinnamon or lemon zest for extra flavor.
