- 4 salmon fillets
- 2 tbsp olive oil
- Salt and black pepper to taste
- 1 tbsp butter
- 8 oz cremini mushrooms, sliced
- 3 garlic cloves, minced
- 3 cups baby spinach
- 3/4 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated parmesan
- 1 tbsp lemon juice
Instructions
- Season salmon with salt and pepper.
- Sear in hot skillet with olive oil for 4–5 minutes on the first side, 2–3 on the other. Set aside.
- Melt butter and sauté mushrooms until browned. Add garlic and stir.
- Add spinach and cook until wilted.
- Pour in cream and broth, then whisk in parmesan and lemon juice. Simmer until thickened.
- Plate creamy spinach and mushrooms and top with seared salmon. Serve warm.
Notes
- Don’t overcook the salmon—keep it just pink inside.
- Use fresh parmesan for smoother sauce texture.
- Add extra broth if sauce thickens too much.
- Lemon zest brightens the final dish beautifully.
