Description

Ingredients

Scale
  • 4 salmon fillets
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • 3 garlic cloves, minced
  • 3 cups baby spinach
  • 3/4 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated parmesan
  • 1 tbsp lemon juice

Instructions

  1. Season salmon with salt and pepper.
  2. Sear in hot skillet with olive oil for 4–5 minutes on the first side, 2–3 on the other. Set aside.
  3. Melt butter and sauté mushrooms until browned. Add garlic and stir.
  4. Add spinach and cook until wilted.
  5. Pour in cream and broth, then whisk in parmesan and lemon juice. Simmer until thickened.
  6. Plate creamy spinach and mushrooms and top with seared salmon. Serve warm.

Notes

  • Don’t overcook the salmon—keep it just pink inside.
  • Use fresh parmesan for smoother sauce texture.
  • Add extra broth if sauce thickens too much.
  • Lemon zest brightens the final dish beautifully.
