Ingredients

  • 8 chicken drumsticks
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 eggs
  • 2 tbsp olive oil
  • Chopped parsley for garnish

Instructions

  1. Preheat oven to 425°F and set a wire rack on a baking sheet.
  2. Mix breadcrumbs, Parmesan, paprika, garlic powder, salt, and pepper in a bowl.
  3. Beat eggs in a separate bowl.
  4. Dip each drumstick in egg, then in breadcrumb mixture, pressing to coat.
  5. Place on rack and drizzle or spray with olive oil.
  6. Bake for 35–40 minutes, turning halfway through, until crispy and golden.
  7. Let rest a few minutes, then garnish with parsley and serve.
