  • 2 cups cooked chicken breast chopped
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • 1/4 cup sun-dried tomatoes chopped
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • 2 cups rotini pasta
  • 2 cups fresh spinach
  • Fresh basil for garnish
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot and sauté garlic and sun-dried tomatoes for 1 minute.
  2. Add cooked chicken Italian seasoning and red pepper flakes. Stir to combine.
  3. Pour in chicken broth and bring to a boil then reduce to a simmer.
  4. Add pasta and cook for 10 minutes until tender stirring occasionally.
  5. Reduce heat and stir in cream and parmesan whisking until smooth.
  6. Add spinach and stir until wilted. Adjust salt to taste.
  7. Serve hot with fresh basil and extra parmesan.
