  • 4 bone-in skin-on chicken thighs
  • 1/3 cup maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 2 garlic cloves minced
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1/2 tsp black pepper
  • 2 cups cubed sweet potatoes
  • 1 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F.
  2. Whisk together maple syrup Dijon mustard soy sauce garlic vinegar olive oil and pepper.
  3. Place chicken thighs and sweet potatoes in a baking dish.
