Ingredients

  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice
  • 1/2 tsp lemon zest (for glaze, optional)

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Cream butter and sugar until light and fluffy. Add egg, vanilla, and lemon zest.
  3. In a separate bowl whisk flour, baking soda, and salt. Add to wet mixture and combine.
  4. Scoop dough onto baking sheet and bake 9–11 minutes until edges are golden.
  5. Cool cookies on the baking sheet for a few minutes, then transfer to a wire rack.
  6. Whisk powdered sugar with lemon juice and zest to make the glaze.
  7. Drizzle glaze over cooled cookies and let it set until firm.
