Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 2 teaspoons Italian seasoning
  • 8 lasagna noodles broken into pieces
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat olive oil and sauté onion until soft. Add garlic and cook 1 more minute.
  2. Add ground beef and cook until browned. Stir in tomato paste and Italian seasoning.
  3. Pour in crushed tomatoes and beef broth. Simmer for 15 minutes.
  4. Add broken lasagna noodles and cook until tender, about 10 minutes.
  5. Mix ricotta with a pinch of salt and Parmesan. Shred mozzarella.
  6. Ladle soup into bowls. Top with ricotta mixture, mozzarella, and fresh basil.
