Description

This keto Tuscan soup is easy quick and healthy perfect for low-carb dinners. Packed with sausage kale and creamy broth it’s one of the best simple ideas for cold days or meal prep. Enjoy this flavorful comfort food without the carbs!


Ingredients

Scale
  • 1 lb Italian sausage, sliced
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 3 cups cauliflower florets
  • 2 cups chopped kale
  • 3/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot. Brown sausage slices and set aside.
  2. In the same pot, sauté onion and garlic until soft.
  3. Add chicken broth and bring to a simmer.
  4. Add cauliflower and cook until tender, about 10–12 minutes.
  5. Return sausage to the pot and stir in chopped kale. Simmer for 5 more minutes.
  6. Reduce heat and stir in heavy cream. Season with salt, pepper, and Parmesan.
  7. Serve hot with extra cheese on top if desired.

Notes

  • Use spicy or mild sausage based on your preference.
  • Spinach can be used instead of kale.
  • Blend some cauliflower for an extra creamy texture.
