Ingredients

- 1 lb Italian sausage, sliced
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 3 cups cauliflower florets
- 2 cups chopped kale
- 3/4 cup heavy cream
- 1/3 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot. Brown sausage slices and set aside.
- In the same pot, sauté onion and garlic until soft.
- Add chicken broth and bring to a simmer.
- Add cauliflower and cook until tender, about 10–12 minutes.
- Return sausage to the pot and stir in chopped kale. Simmer for 5 more minutes.
- Reduce heat and stir in heavy cream. Season with salt, pepper, and Parmesan.
- Serve hot with extra cheese on top if desired.

- Use spicy or mild sausage based on your preference.
- Spinach can be used instead of kale.
- Blend some cauliflower for an extra creamy texture.
