  • 1 onion (sliced)
  • 2 carrots (chopped)
  • 2 potatoes (peeled and cubed)
  • 2 garlic cloves (minced)
  • 1 tbsp ginger (grated)
  • 4 cups water or beef broth
  • 4 blocks Japanese curry roux
  • 1 tbsp oil
  • Cooked white rice (for serving)
  • Optional sesame seeds or parsley for garnish

Instructions

  1. Heat oil in a large pot. Brown the beef in batches until seared on all sides.
  2. Add onions, garlic, and ginger. Sauté until soft and fragrant.
  3. Add carrots and potatoes. Stir and cook for a few minutes.
  4. Pour in water or broth. Simmer for 30–40 minutes until beef and veggies are tender.
  5. Reduce heat. Stir in curry roux blocks and let them melt, stirring until sauce thickens.
  6. Serve hot over cooked rice. Garnish with sesame seeds or parsley if desired.
