Ingredients

  • 2 lbs ground beef
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 2 eggs
  • 1 cup bread crumbs
  • 1/2 cup milk
  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 4 cups mashed potatoes (prepared separately)

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl mix ground beef onion garlic eggs bread crumbs milk Worcestershire sauce salt pepper and half the ketchup.
  3. Shape mixture into a loaf and place in a loaf pan or on a foil-lined baking sheet.
  4. Cover with foil and bake for 40 minutes.
  5. Mix remaining ketchup with Worcestershire and spread over top then sprinkle cheese.
  6. Bake uncovered for another 15-20 minutes until cooked through.
  7. Boil potatoes until tender mash with butter milk salt and pepper.
  8. Let meatloaf rest 10 minutes before slicing and serve with mashed potatoes.

Notes

  • Use a beef-pork mix for added flavor and moisture.
  • Don’t overmix the meat to keep it tender.
  • Add veggies like grated carrots or zucchini to the mix.
  • Warm the milk and butter before mashing potatoes for extra creaminess.
