  • 2 lbs chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 1/4 cup ketchup
  • 1 tbsp fresh ginger grated
  • 2 garlic cloves minced
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • Fresh pineapple slices
  • Green onions chopped
  • Sesame seeds

Instructions

  1. Whisk pineapple juice soy sauce brown sugar ketchup garlic ginger rice vinegar and sesame oil in a bowl.
  2. Place chicken in a zip-top bag and pour marinade over. Refrigerate for at least 4 hours or overnight.
  3. Preheat grill to medium-high and lightly oil the grates.
  4. Remove chicken from marinade and grill 5-7 minutes per side basting with remaining marinade.
  5. Grill pineapple slices 1-2 minutes per side until charred.
  6. Serve chicken over rice topped with grilled pineapple green onions and sesame seeds.
