Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Mix oats, flour, baking soda, cinnamon, and salt in a bowl.
- Cream butter, brown sugar, and granulated sugar until fluffy.
- Add eggs and vanilla; mix well.
- Gradually mix in dry ingredients until combined.
- Scoop dough onto baking sheets and bake 10–12 minutes.
- Cool completely before assembling.
- Beat filling ingredients until fluffy.
- Pair cookies and sandwich with cream filling.
