- 4 orange bell peppers
- 1 1/2 cups cooked rice or quinoa
- 1 small onion, diced
- 2 cloves garlic, minced
- 3/4 cup tomato sauce
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp Italian seasoning
- 1/2 cup shredded cheese (optional)
- 1/2 cup cooked beans or ground meat (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Cut tops off peppers and remove seeds. Carve jack-o’-lantern faces.
- Sauté onion in olive oil for 5 minutes. Add garlic and cook 1 minute.
- Stir in cooked rice, tomato sauce, seasoning, and any optional ingredients.
- Fill peppers with mixture and place tops back on.
- Arrange in baking dish, cover with foil, and bake 30–35 minutes.
- Uncover for last 10 minutes to brown tops slightly.
- Cool a few minutes before serving.
