Ingredients

  • 1 lb salmon fillet, cubed
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp Dijon mustard
  • 2 green onions, finely chopped

Instructions

  1. Cut salmon into cubes and season with oil, garlic powder, paprika, salt, and pepper.
  2. Sear in a hot skillet for 2–3 minutes per side until crisp and cooked through. Set aside.
  3. Melt butter in a saucepan, whisk in flour to make a roux.
  4. Gradually whisk in milk and simmer until smooth and thickened.
  5. Add cheddar cheese and Dijon mustard, stir until melted and seasoned.
  6. Plate salmon cubes and drizzle with cheddar sauce. Garnish with green onions and serve warm.

Notes

  • Make sure pan is hot before adding salmon to get a crispy sear.
  • Use fresh cheddar and whisk continuously for smooth sauce.
  • Garnish with lemon wedges for added brightness.
