- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter
- 1 3/4 cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup whole milk
- 1/2 cup sour cream
- 1 cup rainbow sprinkles (jimmies)
- 2 cups unsalted butter (for frosting)
- 4 cups powdered sugar
- 1/4 cup heavy cream
- Food coloring gels (pink, blue, yellow, purple)
- Extra rainbow sprinkles (for topping)
Instructions
- Preheat oven to 350°F and prepare three 8-inch cake pans.
- Whisk flour, baking powder, and salt in a bowl.
- Beat butter and sugar until fluffy, then add eggs one at a time.
- Mix in vanilla, then alternate adding milk and sour cream with the dry mix.
- Fold in rainbow sprinkles gently.
- Divide batter into pans and bake 25–30 minutes. Cool completely.
- Beat butter and powdered sugar, then add cream to make frosting.
- Color frosting with food gels and set each color aside.
- Stack cake layers with buttercream in between, then frost the sides with rainbow stripes.
- Pipe pink swirls on top and cover with sprinkles.
Notes
- Use jimmies to prevent bleeding in batter.
- Chill layers slightly before frosting for easier assembly.
- Add sprinkle surprise inside the cake for fun effect.
- Let cake sit at room temp before serving.
