Description

Perfect for birthdays, kids’ parties, or rainbow-themed celebrations, this funfetti cake is full of color and joy with every bite.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • 1/2 cup sour cream
  • 1 cup rainbow sprinkles (jimmies)
  • 2 cups unsalted butter (for frosting)
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • Food coloring gels (pink, blue, yellow, purple)
  • Extra rainbow sprinkles (for topping)

Instructions

  1. Preheat oven to 350°F and prepare three 8-inch cake pans.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Beat butter and sugar until fluffy, then add eggs one at a time.
  4. Mix in vanilla, then alternate adding milk and sour cream with the dry mix.
  5. Fold in rainbow sprinkles gently.
  6. Divide batter into pans and bake 25–30 minutes. Cool completely.
  7. Beat butter and powdered sugar, then add cream to make frosting.
  8. Color frosting with food gels and set each color aside.
  9. Stack cake layers with buttercream in between, then frost the sides with rainbow stripes.
  10. Pipe pink swirls on top and cover with sprinkles.

Notes

  • Use jimmies to prevent bleeding in batter.
  • Chill layers slightly before frosting for easier assembly.
  • Add sprinkle surprise inside the cake for fun effect.
  • Let cake sit at room temp before serving.
