Ingredients

  • 1 lb ground beef
  • 1 large yellow onion sliced
  • 2 cups cooked rice
  • 1 can cream of mushroom soup
  • ½ cup sour cream
  • 1 ½ cups shredded cheese (cheddar and mozzarella)
  • 2 tablespoons butter
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown the ground beef in a skillet with salt pepper and garlic powder. Drain excess grease and set aside.
  3. In the same skillet melt butter and sauté onions until golden and caramelized (10–15 minutes).
  4. In a bowl combine rice cream of mushroom soup sour cream half the cheese and cooked ground beef.
  5. Spread mixture into a greased 9×13 baking dish. Top with caramelized onions and remaining cheese.
  6. Bake uncovered for 25 minutes or until bubbly and golden on top.
  7. Let rest for 5 minutes and garnish with fresh parsley before serving.
