Ingredients

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 2 cups enchilada sauce
  • 10 corn tortillas
  • 1 cup canned black beans drained
  • 1 cup frozen corn
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • Fresh cilantro chopped for garnish

Instructions

  1. Heat olive oil in a skillet. Add onion and sauté until soft. Add garlic and cook 1 minute.
  2. Add ground beef and cook until browned. Stir in half the enchilada sauce, black beans, and corn. Mix well.
  3. In a greased 9×13 dish, layer some meat mixture, tortillas, cheese. Repeat layers, ending with cheese.
  4. Bake at 375°F for 20–25 minutes until cheese is bubbly and golden.
  5. Let cool for 5–10 minutes. Garnish with fresh cilantro and serve warm.
