Description

Looking for easy weeknight dinner ideas? This quick and simple skillet chicken is the best go-to meal—juicy, healthy, and full of flavor! Ready in one pan, great for meal prep, and pairs with everything from rice to veggies.

Ingredients

Scale
  • 1 ½ lbs boneless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken 5–6 minutes per side until browned and cooked through. Remove from pan.
  3. In same skillet, melt butter. Add garlic and sauté 30 seconds.
  4. Stir in chicken broth, honey, and Dijon mustard. Simmer 2–3 minutes.
  5. Return chicken to pan and coat with sauce. Simmer 2–3 more minutes.
  6. Garnish with parsley and serve hot.

Notes

  • Use chicken breasts if preferred—just cook slightly less time.
  • Add red pepper flakes for heat or lemon juice for brightness.
  • Great with mashed potatoes, rice, or roasted vegetables.
  • Double the sauce if serving over pasta.
