- 1 lb ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 tbsp tomato paste
- 1 can crushed tomatoes (28 oz)
- 4 cups beef broth
- 2 tsp Italian seasoning
- 2 cups rotini or broken lasagna noodles
- 3/4 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil, chopped
- Salt and pepper, to taste
Instructions
- Brown ground beef in a large pot. Drain excess fat.
- Add onion and garlic. Sauté until soft.
- Stir in tomato paste. Cook for 1 minute.
- Add crushed tomatoes, broth, Italian seasoning, salt, and pepper. Simmer 5 minutes.
- Add pasta and cook until tender, about 10–12 minutes.
- Ladle into bowls. Top with ricotta and mozzarella cheese.
- Garnish with basil and serve hot.
Notes
- Use sausage or turkey instead of beef for a variation.
- Add extra broth if soup thickens too much.
- Top with parmesan for extra flavor.
- Store leftovers without pasta to prevent sogginess.
