Description

Try this easy lasagna soup for a quick and cozy dinner idea! Made with beef noodles cheese and tomato broth it’s one of the best simple and comforting soup recipes perfect for weeknights holidays or meal prep!


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 can crushed tomatoes (28 oz)
  • 4 cups beef broth
  • 2 tsp Italian seasoning
  • 2 cups rotini or broken lasagna noodles
  • 3/4 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil, chopped
  • Salt and pepper, to taste

Instructions

  1. Brown ground beef in a large pot. Drain excess fat.
  2. Add onion and garlic. Sauté until soft.
  3. Stir in tomato paste. Cook for 1 minute.
  4. Add crushed tomatoes, broth, Italian seasoning, salt, and pepper. Simmer 5 minutes.
  5. Add pasta and cook until tender, about 10–12 minutes.
  6. Ladle into bowls. Top with ricotta and mozzarella cheese.
  7. Garnish with basil and serve hot.

Notes

  • Use sausage or turkey instead of beef for a variation.
  • Add extra broth if soup thickens too much.
  • Top with parmesan for extra flavor.
  • Store leftovers without pasta to prevent sogginess.
