- 1 lb sea scallops
- 1 tablespoon olive oil
- 2 tablespoons butter divided
- 3 garlic cloves minced
- 1 cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley chopped for garnish
Instructions
- Pat scallops dry and season with salt and pepper.
- Heat olive oil and 1 tablespoon butter in skillet over medium-high heat. Sear scallops 2–3 minutes per side until golden. Remove and set aside.
- Add remaining butter to skillet and sauté garlic for 30 seconds.
- Pour in heavy cream and stir in Parmesan until melted and smooth.
- Add lemon juice and adjust seasoning with salt and pepper.
- Return scallops to skillet and spoon sauce over them. Cook for 1–2 minutes until heated through.
- Garnish with parsley and serve hot.
