Ingredients

Scale
  • 1 lb sea scallops
  • 1 tablespoon olive oil
  • 2 tablespoons butter divided
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish

Instructions

  1. Pat scallops dry and season with salt and pepper.
  2. Heat olive oil and 1 tablespoon butter in skillet over medium-high heat. Sear scallops 2–3 minutes per side until golden. Remove and set aside.
  3. Add remaining butter to skillet and sauté garlic for 30 seconds.
  4. Pour in heavy cream and stir in Parmesan until melted and smooth.
  5. Add lemon juice and adjust seasoning with salt and pepper.
  6. Return scallops to skillet and spoon sauce over them. Cook for 1–2 minutes until heated through.
  7. Garnish with parsley and serve hot.

Notes

  • Use dry scallops for the best sear.
  • Don’t overcrowd the pan or scallops won’t brown.
  • Use fresh garlic and Parmesan for maximum flavor.
