  • 4 chicken thighs
  • 1 cup long-grain rice
  • 3 garlic cloves minced
  • 1 onion chopped
  • 1 bell pepper diced
  • 1 1/2 cups chicken broth
  • 1 cup coconut milk
  • 1 tsp dried thyme
  • 1/2 tsp allspice
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh parsley or scallions for garnish

Instructions

  1. Season chicken with salt, pepper, allspice, and paprika. Sear until golden and set aside.
  2. Sauté onion, garlic, and bell pepper in the same pan until soft.
  3. Stir in rice and toast for 1-2 minutes.
  4. Add chicken broth, coconut milk, thyme, and salt. Bring to a simmer.
  5. Place chicken back in the pan, cover, and cook for 25 minutes until rice is tender.
  6. Finish with lime juice and fresh herbs before serving.
