Ingredients

  • 2 1/2 pounds potatoes, cubed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1/4 cup melted butter
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Wash and cube potatoes, leaving the skin on.
  2. In a bowl, mix soup, sour cream, melted butter, garlic powder, salt, and pepper.
  3. Add potatoes to the crockpot and pour sauce over them. Stir to coat.
  4. Cover and cook on high for 3–4 hours or low for 6–7 hours until tender.
  5. Stir in most of the cheeses 30 minutes before serving. Sprinkle remaining cheese on top.
  6. Cover until cheese is melted, then stir and serve warm.

Notes

  • Substitute frozen hash browns for quicker prep.
  • Add bacon or green onions for extra flavor.
