- 2 large chicken breasts, halved
- 1/2 cup grated parmesan cheese
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 4 cloves garlic, minced
- 2 tbsp butter (for frying)
- 1 tbsp olive oil
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- Salt, to taste
- Black pepper, to taste
- Fresh thyme, for garnish
Instructions
- Slice chicken breasts into cutlets and season with salt and pepper.
- Set up dredging bowls with flour, beaten eggs, and parmesan-panko mix.
- Coat chicken in flour, egg, then breadcrumb mixture.
- Heat butter and oil in skillet and fry chicken 3–4 minutes per side until golden.
- Drain on paper towels.
- For sauce, sauté garlic in butter then add broth and cream and simmer until thickened.
- Serve chicken with sauce drizzled on top and garnish with thyme.
Notes
- Use Pecorino for a sharper cheese flavor.
- Bake instead of frying for a lighter version.
- Add lemon juice to the sauce for brightness.
