- 1 head garlic
- 1 tbsp olive oil
- 2 tbsp butter
- 1 small yellow onion, diced
- 2 tbsp all-purpose flour
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 package cheese tortellini (about 9 oz)
- 2 cups baby spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh thyme or Italian seasoning, to taste
Instructions
- Preheat oven to 400°F. Slice top off garlic bulb, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes.
- Melt butter in a large pot. Sauté diced onion until soft, about 5 minutes.
- Whisk in flour to form a roux. Cook for 1 minute.
- Slowly pour in broth while whisking to avoid lumps. Simmer gently.
- Squeeze roasted garlic cloves into the pot and stir.
- Add cheese tortellini and cook according to package, about 6–8 minutes.
- Stir in heavy cream and reduce heat. Simmer gently for 3–5 minutes.
- Add spinach and Parmesan. Stir to combine. Season with salt, pepper, and herbs.
