Ingredients
Scale
- 12 oz farfalle pasta
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 lb Italian sausage (optional)
- Chopped parsley for garnish
Instructions
- Boil pasta in salted water until al dente. Reserve some pasta water, then drain.
- In a skillet, melt butter and olive oil. Add garlic and sauté for 1 minute.
- Pour in heavy cream and simmer gently.
- Stir in parmesan cheese until smooth and creamy.
- If using sausage, brown it separately and stir it in now.
- Season with salt and pepper.
- Add cooked pasta to the sauce and stir to coat. Add pasta water as needed to thin the sauce.
- Garnish with parsley and more parmesan before serving.
Notes
- Use milk with flour or cream cheese for a lighter sauce.
- Try adding spinach, peas, or roasted veggies.
- Pasta water helps loosen thick sauce without thinning flavor.
- Fresh parmesan melts better than pre-shredded.
