Ingredients

  • 2.5 lbs russet potatoes, peeled and chopped
  • 1/2 cup butter
  • 3/4 cup whole milk
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 2 cups beef or chicken broth
  • 2 tbsp all-purpose flour
  • 2 tbsp butter or pan drippings
  • Fresh parsley for garnish (optional)

Instructions

  1. Boil potatoes in salted water until fork-tender, about 15–20 minutes.
  2. In a saucepan, melt butter or drippings. Whisk in flour and cook 1 minute.
  3. Gradually whisk in broth. Simmer until thickened. Season with salt and pepper.
  4. Drain potatoes and return to pot. Let steam off.
  5. Add butter, milk, and sour cream. Mash until smooth. Season to taste.
  6. Scoop mashed potatoes into a bowl and pour over warm gravy. Garnish with parsley.
