- 2.5 lbs russet potatoes, peeled and chopped
- 1/2 cup butter
- 3/4 cup whole milk
- 1/2 cup sour cream
- Salt and pepper to taste
- 2 cups beef or chicken broth
- 2 tbsp all-purpose flour
- 2 tbsp butter or pan drippings
- Fresh parsley for garnish (optional)
Instructions
- Boil potatoes in salted water until fork-tender, about 15–20 minutes.
- In a saucepan, melt butter or drippings. Whisk in flour and cook 1 minute.
- Gradually whisk in broth. Simmer until thickened. Season with salt and pepper.
- Drain potatoes and return to pot. Let steam off.
- Add butter, milk, and sour cream. Mash until smooth. Season to taste.
- Scoop mashed potatoes into a bowl and pour over warm gravy. Garnish with parsley.
