Ingredients

  • 2 boneless chicken breasts
  • 8 oz fettuccine or linguine
  • 3 cloves garlic, minced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish
  • 1/2 cup reserved pasta water

Instructions

  1. Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water before draining.
  2. Season chicken with salt and pepper. Sear in olive oil over medium heat, 5–6 minutes per side. Set aside.
  3. In the same pan, melt butter and sauté garlic until golden.
  4. Add cream and bring to a gentle simmer. Stir in parmesan until smooth.
  5. Slice chicken and return to pan with cooked pasta. Toss everything together, adding pasta water as needed.
  6. Top with more parmesan and parsley. Serve hot.

Notes

  • Use freshly grated parmesan for best melting.
  • Don’t boil the cream too hard or the sauce may split.
  • Leftovers reheat best with a splash of milk or cream.
