- 2 chicken breasts cut into chunks
- 2 cups sliced mushrooms
- 3 garlic cloves minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/3 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tbsp butter
- Salt and pepper to taste
- Fresh parsley chopped
Instructions
- Season chicken with salt and pepper. Sear in oil and butter until golden and cooked through. Remove and set aside.
- Sauté mushrooms in the same skillet until browned.
- Add garlic and cook for 30 seconds.
- Deglaze with chicken broth and simmer for 2-3 minutes.
- Reduce heat, stir in cream and Parmesan, and simmer until thickened.
- Return chicken to skillet and stir to coat in sauce.
- Garnish with parsley and serve hot.
