Ingredients

Scale
  • 2 chicken breasts cut into chunks
  • 2 cups sliced mushrooms
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley chopped

Instructions

  1. Season chicken with salt and pepper. Sear in oil and butter until golden and cooked through. Remove and set aside.
  2. Sauté mushrooms in the same skillet until browned.
  3. Add garlic and cook for 30 seconds.
  4. Deglaze with chicken broth and simmer for 2-3 minutes.
  5. Reduce heat, stir in cream and Parmesan, and simmer until thickened.
  6. Return chicken to skillet and stir to coat in sauce.
  7. Garnish with parsley and serve hot.
