Description

Perfect for busy weeknights, family meals, or cozy evenings, this creamy chicken and rice is comforting and easy to make.


Ingredients

  • 2 chicken breasts, cubed
  • 2 cups cooked white rice
  • 1.5 cups chicken broth
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cloves garlic, minced
  • 1/2 onion, diced
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley

Instructions

  1. Season chicken with salt and pepper. Cook in butter over medium heat until golden. Remove from pan.
  2. Add more butter, sauté onion and garlic until soft.
  3. Stir in flour and cook for 1 minute to make a roux.
  4. Whisk in chicken broth and milk. Simmer until thickened.
  5. Stir in Parmesan and season with salt and pepper.
  6. Add cooked rice and chicken. Mix gently and heat through.
  7. Top with chopped parsley and serve warm.

Notes

  • Use rotisserie chicken for faster prep.
  • Swap white rice for brown or cauliflower rice.
  • Add spinach for a healthy twist.
  • Refrigerate leftovers up to 3 days.
