- 2 chicken breasts, cubed
- 2 cups cooked white rice
- 1.5 cups chicken broth
- 1 cup milk
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cloves garlic, minced
- 1/2 onion, diced
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1 tbsp chopped fresh parsley
Instructions
- Season chicken with salt and pepper. Cook in butter over medium heat until golden. Remove from pan.
- Add more butter, sauté onion and garlic until soft.
- Stir in flour and cook for 1 minute to make a roux.
- Whisk in chicken broth and milk. Simmer until thickened.
- Stir in Parmesan and season with salt and pepper.
- Add cooked rice and chicken. Mix gently and heat through.
- Top with chopped parsley and serve warm.

- Use rotisserie chicken for faster prep.
- Swap white rice for brown or cauliflower rice.
- Add spinach for a healthy twist.
