  • 2 cups cooked chicken, shredded
  • 3/4 cup uncooked white rice
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 8 cups chicken broth
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper, to taste
  • 1/2 tsp dried thyme or Italian seasoning

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Sauté for 5–7 minutes.
  3. Stir in garlic and cook for 30 seconds.
  4. Pour in chicken broth and bring to a boil.
  5. Add rice, salt, pepper, and seasoning. Reduce heat and simmer.
  6. Cook uncovered for 15–20 minutes or until rice is tender.
  7. Stir in shredded chicken and simmer for another 5 minutes.
  8. Adjust seasoning and stir in fresh parsley before serving.
