Ingredients

  • 2 boneless chicken breasts
  • 1 cup cremini mushrooms sliced
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/4 cup flour
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish

Instructions

  1. Pound chicken to even thickness and season with salt and pepper.
  2. Dredge chicken in flour, shaking off excess.
  3. Heat oil and 1 tbsp butter in skillet, cook chicken until golden and remove.
  4. In same skillet, sauté mushrooms in remaining butter with a pinch of salt.
  5. Add garlic, then deglaze pan with Marsala wine, scraping up browned bits.
  6. Add chicken broth and simmer until sauce thickens.
  7. Return chicken to skillet and simmer 2 minutes more in sauce.
  8. Garnish with parsley and serve hot.
