Description

Perfect for family dinners, chilly nights, or comforting meals, this chicken and dumplings recipe is creamy, hearty, and easy to make.


Ingredients

  • 1 lb chicken breast or thighs
  • 6 cups chicken broth
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp melted butter
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 tbsp chopped fresh parsley

Instructions

  1. In a large pot, sauté onion, carrots, celery, and garlic in butter until soft.
  2. Add chicken broth and bring to a boil. Add chicken and simmer until cooked through, about 15 minutes.
  3. Remove chicken, shred it, and return it to the pot.
  4. In a bowl, mix flour, baking powder, salt, melted butter, and milk to form dumpling dough.
  5. Drop spoonfuls of dough into the simmering pot. Cover and cook for 15 minutes.
  6. Season with salt and pepper. Sprinkle with parsley and serve hot.

Notes

  • Use rotisserie chicken for a shortcut.
  • Add peas or corn for extra texture.
  • Do not lift the lid while dumplings cook.
  • Stir in a splash of cream for richness.
