- 1 lb chicken breast or thighs
- 6 cups chicken broth
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp melted butter
- 1/2 cup milk
- Salt and pepper to taste
- 1 tbsp chopped fresh parsley
Instructions
- In a large pot, sauté onion, carrots, celery, and garlic in butter until soft.
- Add chicken broth and bring to a boil. Add chicken and simmer until cooked through, about 15 minutes.
- Remove chicken, shred it, and return it to the pot.
- In a bowl, mix flour, baking powder, salt, melted butter, and milk to form dumpling dough.
- Drop spoonfuls of dough into the simmering pot. Cover and cook for 15 minutes.
- Season with salt and pepper. Sprinkle with parsley and serve hot.

- Use rotisserie chicken for a shortcut.
- Add peas or corn for extra texture.
- Do not lift the lid while dumplings cook.
