Ingredients

  • 12 lasagna noodles
  • 2 cups cooked shredded chicken
  • 1 1/2 cups ricotta cheese
  • 2 cups fresh spinach, chopped
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups Alfredo sauce
  • 1 egg
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Boil lasagna noodles until al dente; lay flat to cool.
  2. Mix ricotta, chicken, spinach, half the mozzarella, Parmesan, egg, salt, and pepper.
  3. Spread Alfredo sauce on bottom of baking dish.
  4. Spread filling on each noodle and roll up.
  5. Place rolls seam-side down in dish.
  6. Top with remaining Alfredo sauce and mozzarella.
  7. Bake at 375°F for 25–30 minutes until bubbly and golden.
  8. Cool slightly and garnish with parsley before serving.

Notes

  • Use rotisserie chicken to save time.
  • Mix in extra veggies for added flavor.
