Description

Craving something flavorful and festive? This Caribbean chicken and rice recipe is easy quick and full of bold tropical spice! A simple one-pan idea for healthy dinners or party meals. The best mix of juicy chicken and colorful veggies in one easy dish everyone will love!


Ingredients

  • 4 bone-in chicken thighs
  • 1 ½ cups long grain rice
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons Caribbean seasoning
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 3 cups chicken broth
  • Chopped cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Marinate chicken with Caribbean seasoning lime juice olive oil salt and pepper for at least 30 minutes.
  2. Heat olive oil in a skillet and sear chicken thighs on both sides until browned. Remove and set aside.
  3. Sauté onion bell peppers and garlic in the same pan until softened.
  4. Add rice and stir to coat with the vegetables and spices.
  5. Pour in chicken broth and bring to a simmer.
  6. Place seared chicken thighs on top of the rice. Cover and cook on low for 20 minutes until rice is tender and chicken is cooked through.
  7. Fluff rice with a fork squeeze lime juice over the top and garnish with chopped cilantro before serving.

Notes

  • Boneless thighs or breasts can be used if preferred.
  • Add pineapple or coconut milk for a sweeter twist.
  • Marinate chicken overnight for the best flavor.
  • Leftovers make a great next-day lunch.
