- 4 bone-in chicken thighs
- 1 ½ cups long grain rice
- 1 red bell pepper diced
- 1 green bell pepper diced
- 1 small onion chopped
- 2 cloves garlic minced
- 2 tablespoons Caribbean seasoning
- Juice of 1 lime
- 2 tablespoons olive oil
- 3 cups chicken broth
- Chopped cilantro for garnish
- Salt and pepper to taste
Instructions
- Marinate chicken with Caribbean seasoning lime juice olive oil salt and pepper for at least 30 minutes.
- Heat olive oil in a skillet and sear chicken thighs on both sides until browned. Remove and set aside.
- Sauté onion bell peppers and garlic in the same pan until softened.
- Add rice and stir to coat with the vegetables and spices.
- Pour in chicken broth and bring to a simmer.
- Place seared chicken thighs on top of the rice. Cover and cook on low for 20 minutes until rice is tender and chicken is cooked through.
- Fluff rice with a fork squeeze lime juice over the top and garnish with chopped cilantro before serving.
Notes
- Boneless thighs or breasts can be used if preferred.
- Add pineapple or coconut milk for a sweeter twist.
- Marinate chicken overnight for the best flavor.
