Ingredients

  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 cup melted butter
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups blueberries (fresh or frozen)

Instructions

  1. Preheat oven to 375°F and line a muffin tin with paper liners.
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, beat eggs and sugar, then stir in butter, milk, and vanilla.
  4. Combine wet and dry ingredients, stirring until just mixed.
  5. Fold in blueberries gently.
  6. Spoon batter into muffin cups, about 3/4 full.
  7. Bake for 18–22 minutes until golden and a toothpick comes out clean.
  8. Cool slightly, then transfer to a wire rack.

Notes
