- 1 cup cottage cheese
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup blueberries
- 2 tbsp butter (for greasing and topping)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl whisk eggs cottage cheese sugar and vanilla extract until smooth.
- In another bowl mix flour baking powder and salt.
- Gradually add dry ingredients to wet mixture stirring gently.
- Fold in most of the blueberries reserving a few for the top.
- Grease a 9-inch springform pan and pour in the batter smoothing the top.
- Sprinkle remaining blueberries on top and dot with butter if desired.
- Bake for 50-60 minutes until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes then remove and cool completely on a rack.
