  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 1/2 cups cooked rice
  • 1 1/2 cups mixed vegetables
  • 1/2 cup beef broth
  • 1 cup shredded cheddar cheese
  • Fresh parsley chopped for garnish

Instructions

  1. Heat a large skillet over medium heat. Cook ground beef and diced onion until browned. Add garlic and cook for 1 minute.
  2. Stir in tomato paste, paprika, salt, and pepper. Pour in beef broth and simmer for 2 minutes.
  3. Add cooked rice and mixed vegetables. Stir to combine and cook for 5 more minutes.
  4. Sprinkle cheddar cheese on top. Cover skillet until cheese melts.
