Instructions

  1. Preheat oven to 375°F and line a muffin pan with paper liners.
  2. In a bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk eggs, sugars, oil, vanilla, and milk.
  4. Combine wet and dry ingredients, stirring just until combined.
  5. Fold in chopped apples gently.
  6. Spoon batter into liners and top with extra apple slices if desired.
  7. Bake for 18–22 minutes until a toothpick comes out clean.
  8. Cool in pan for 5 minutes then transfer to a wire rack.
